Bon Appetit: Italian Dressing & Marinade

I’ve been talking for weeks about giving in and making my own salad dressing. Dressings can be expensive. The creamier they are, the less healthy they are. It’s like you can’t win. I’ve seen so many of those Goodful-type videos, and I decided to give it a try. Luckily, I happened to have everything on hand in my pantry, so it wasn’t too hard.

I’m going to be 100% honest. I flew by the seat of my pants for this recipe. It turned out delicious…I actually went back and doubled it after I finished taking pictures.

Italian Dressing & Marinade

Ingredients:

  • 1/3 C olive oil
  • 1/3 C red wine vinegar
  • 1T dijon mustard
  • 1t Italian seasoning
  • 1t parsley
  • 1t basil
  • 1t oregano
  • 1t garlic powder
  • 1t onion powder
  • pepper, to taste
  • a splash of apple cider vinegar

I know…aren’t you proud? I actually measured this time!

Directions

  1. Start with a good, old fashioned mason jar. Add olive oil and red wine vinegar. Add dijon mustard. Note: The mustard stuck to the measuring spoon, so I added a little dash afterward to be sure it was right around the full tablespoon.

  2. Add all seasonings into a separate bowl, stir. Add seasoning to mason jar.

  3. Put the lid on and shake.

Now, this dressing is super vinegar-y. I love vinegar though, so I don’t mind. If you do, you may want to opt for a bit less vinegar, or add some honey. This would also make for a delicious marinade as well. For dinner the other night, I actually sauteed some zucchini and onions with it. The taste was delicious, but the smell of it cooking…oh my goodness. It was heaven!

This is my first blog taking pictures with my new camera too! My dad was a gem and helped me pick out a good one for what I was looking for.  If you’re in a similar situation, I would definitely recommend the Nikon b500. Can you tell a difference?
