In case you didn’t know, my memoir will be called Not Worth the Dishes. It’s how I gauge new recipes, especially ones that involve a ton of pots and pans or whatever. The more complicated something is, the better it should taste. That leads me to my favorite quick and easy meal: Mediterranean Flatbread Pizza.
I don’t remember how I came about creating this dinner. I think I was craving some Greek/Mediterranean food (think hummus and kale and such). I took to Pinterest, as we often do, and came across the concept of the Mediterranean Flatbread. I had made similar things on tortillas, but they were always just sad.
I took a chance at my local Kroger and found a 5-pack of round flatbreads for $2.50, and now they are a staple in my pantry. Since this meal is so easy, I’ve thrown it together before book club or when I had contractors in my house or when I was just feeling lazy and didn’t want to cook.
Mediterranean Flatbread Pizza
Ingredients
- Flatbreads – I use round ones, but they do also have longer, rectangular flatbreads too (like you see in restaurants). Those sizes are about 2 meals for me, so I prefer the round ones for single servings.
- Hummus – I tend to prefer a flavored hummus (like roasted red pepper or garlic), but plain hummus is delicious too.
- Feta Cheese – I have also used Goat Cheese. It’s really up to you, but I’d recommend something that can crumble and has a bit of a “tang”.
- Shredded Mozzarella
- Greens – I use kale because I prefer kale and it stands up to the oven a bit better, but you could also use something like arugula. I would NOT use your standard lettuces or spring mix.
- Protein, if desired – I have made this with deli turkey and even canned chicken, but it’s also good vegetarian too.
- Other Toppings – I discovered that I really love apples on these flatbreads. It’s a great sweet addition with the balsamic glaze and feta cheese.
- Balsamic Glaze – Now, the first few times I made these, I only used regular balsamic vinegar and it was fine. If that’s all you have, you will be fine. However, the glaze really upped my Mediterranean flatbread pizza game. I was able to find the glaze at Kroger, and I think my mom found some at Publix as well. They’re in the same section as regular balsamic vinegar.
Directions:
- Preheat your oven to 350°.
- While the oven is preheating, place a silicone baking mat on a baking sheet. Place your flatbread (or however many flatbreads you’re making) on the baking sheet.
- Cover with hummus. I don’t slather it on. For me, the hummus is just there to add a creamy layer to the flatbread.
- Add your toppings, but not the mozzarella cheese. My order is usually protein, cheese, greens.
- Top with shredded mozzarella. Don’t use a ton! This isn’t a standard pizza. The mozzarella is really just there to keep your toppings all on.
- (Optional) Add apple slices. Yes, these go on top of the cheese and all other toppings for me.
- Bake at 350° for about 10 minutes, or until the mozzarella cheese is melted.
- Cut round flatbreads into quarters and top with balsamic glaze drizzle.
That’s it! Seriously, these Mediterranean flatbread pizzas are my absolute favorite. One week, I think I ate one every day.
They’re also super versatile. Change up the toppings. Add a hummus bar and allow people to create their own. The flatbreads can also be used for literally any other flatbread you have in mind: buffalo chicken pizza, regular pizza, barbecue pizza… Once you have them in your house, you will keep them in your house for life.
